For centuries, the area around the Italian seaside town of Cervia has been known for one thing: its distinctive salt. The Cervia salt mines are located on the Adriatic Sea coast on the boundary between Rimini and Ravena, the two easternmost provinces of the Emilia-Romagna region. Going back to Roman times, the salt mined here has been prized for its distinctive flavor, and continues to be known around the world.
